Fish Taco Tuesday

Recently in the twitter world there was a lot of talk about fish tacos by fellow foodies.  As a Mexican/Southwestern food lover (meaning I love all things beans, guacamole, salsa, etc) and also a fish lover, I was convinced that I needed to try these so called fish tacos ASAP.

Fast forward a few hours. I got out of class, rushed to the grocery store to pick up fresh tilapia, avocados, and corn tortillas, and informed my mother that we were having fish tacos for dinner.  And you know what? 40 minutes after I arrived home with the groceries we had fish tacos for dinner! As you can see, I mean business when it comes to yummy food ;-)

Fish Taco Ingredients:

*4 Baked Tilapia Fillets (drizzle olive oil in a pan, place fillets in the pan, sprinkle fish with a cajun seasoning, bake fish at 375 F for ~25 minutes)

Yumminess in a wrap :)

*4 Chopped Roma Tomatoes and 4 servings salsa

*1 Avocado Sliced or made into Guacamole

*1/2 cup Shredded Cheese

*1 cup Black beans

*1 Red bell pepper, 2 cloves garlic, and 1/2 onion sauteed in 1-1/2 TB olive oil

*1 Head Romaine lettuce chopped

*1/4-1/2 cup 2% plain Greek Yogurt used as sour cream

*4 Corn Tortillas or Whole Wheat Tortillas

Ingredients Serve 4

We served it assembly line style.  This way everyone can choose what toppings he or she likes best.  This meal is pretty quick, healthy, family friendly, and quite tasty.  My whole family loved the tacos (even my dad who is not a big fish fan).  And, you know you have a good meal when you can get everyone to agreement on it!  So, did I talk you into trying fish tacos yet?
